Mom's Recipe,
by the DozenA Dozen Tamales, Estilo Puebla

Meet Severina

It starts with Mom

Every tamale we make is Severina's recipe. To tell you about them, we have to start with her.

Her story begins in a small town in Puebla, Mexico, and with her own mother, Elena.

01

Coatzingo, Puebla

Severina comes from Coatzingo, Zaragoza, in Puebla, Mexico. In her small town there weren't many opportunities. People worked in the fields, and most of all, they worked the corn.

02

One of nine

Severina was one of nine kids. While she was still in elementary school, she left to go to work and help feed her family.

03

Taught by Elena

It was her mother, Elena, who taught her to make tamales. Today her family makes Puebla-style tamales from that same recipe.

04

A Dozen Tamales

A Dozen Tamales carries Severina's recipe forward, made the way Elena taught her. The name came easily: a dozen is how everyone orders tamales.
